One Pan Shrimp and Broccoli

Hey all!!! If you know me, you know I'm always meal prepping. It's the only way our busy family can manage to eat healthy food and not resort to the drive through during our crazy weeks filled with work and sports practices. If you are tired of your go to meals and are looking for something new, I have an amazingly easy and delish recipe for you to try!
One pan shrimp and broccoli. It seriously only takes a few minutes to make and it was a hit with our whole family, kids included!!
Ingredients:
3 big heads of broccoli chopped (or buy the pre cut bag from SAMs club)
2 pounds of cleaned and deveined shrimp
Olive oil
Lemon juice
Your choose of seasonings: salt, pepper, seasoned salt, old bay
Directions:
Pre heat oven to 375
Line 2 baking sheets with tinfoil
Toss chopped broccoli with olive oil and lemon juice (just drizzle each, no need to measure)
Divide broccoli between the 2 baking sheets and then top with shrimp
Sprinkle both pans with seasonings, whatever your family will like. I simply used salt and pepper but will definitely be trying some old bay next time.
Bake for 20-25 minutes until the shrimp are pink and the broccoli is starting to brown.
We served ours as is, but you could definitely serve over some brown rice too.
Soooo easy. Soooo good. Soooo healthy.
If you are using following the Portion Fix guidelines or 21 day Fix, this would be 1 💚 1 ❤️ and 1 🥄
