Clean  Eating Pork Carnitas  Ingredients: 3-4 lb Pork butt roast cut into chunks Salt & pepper to taste 1 tbs oregano 1 tbs cumin 4 tsp minced garlic  1 lime 1 orange  1 onion  Instructions: Place pork in crockpot  Season with salt, pepper, oregano, and cumin Add garlic  Clean and chop onion and add Cut lime in half, squeeze juice over pork, and toss lime in  Cut orange in half, squeeze juice over pork, and toss orange in  Cover and cook in crockpot for 8 hours Then line a baking sheet with tin foil. Remove pork, shred with 2 forks, and place on baking sheet. Broil in oven for 8-10 minutes.  Next just fill your tortilla with this yummy goodness and any other toppings your family loves. I set up a little assembly line and we added our favorite toppings. This has been an awesome long weekend filled with friends, family, FUN, and lots of not so healthy food and drink๐Ÿ‡บ๐Ÿ‡ธ I have enjoyed every second (and bite) but I am ready to get back to my normal clean eating. I am actually CRAVING some fruits and veggies! It's back to work tomorrow so I am meal prepping today to avoid the last minute panicked thought of "whats for dinner?" One Pan Shrimp and Broccoli Hey all!!! If you know me, you know I'm always meal prepping. It's the only way our busy family can manage to eat healthy food and not resort to the drive through during our crazy weeks filled with work and sports practices. If you are tired of your go to meals and are looking for something new, I have an amazingly easy and delish recipe for you to try!  One pan shrimp and broccoli. It seriously only takes a few minutes to make and it was a hit with our whole family, kids included!!  Ingredients:  3 big heads of broccoli chopped (or buy the pre cut bag from SAMs club)  2 pounds of cleaned and deveined shrimp  Olive oil  Lemon juice Your choose of seasonings: salt, pepper, seasoned salt, old bay Directions: Pre heat oven to 375 Line 2 baking sheets with tinfoil Toss chopped broccoli with olive oil and lemon juice (just drizzle each, no need to measure) Divide broccoli between the 2 baking sheets and then top with shrimp  Sp...

You asked and I'll answer! Egg roll in a bowl recipe is here. I totally winged this recipe, but my family is super happy with the results. It's versatile and you can adjust and substitute as needed.  I started by browning 1 1/2 - 2 pounds of meat. I used grass fed local ground beef but you could also use ground turkey... and next time I plan to try browned sausage.  Once browned I added to it: 1 Tbs coconut oil (sesame would be good as well) 2 chopped onions 1 cup shredded (or finely chopped) carrots Fresh garlic (as much or as little as you like, I used about 2 tsp chopped)  Once that was browned, I added:  1/2 cup organic beef broth 1 1/2 tsp powdered ginger 1 1/2 tsp salt Black pepper to taste Crushed red pepper to taste  4 tsp liquid aminos (or soy sauce)  4 Tbs sweetener (raw organic cane sugar or honey both work well)  Then toss in 1 whole head of chopped cabbage. I have been doing the mom guilt thing for weeks now..... I know you moms feel me! I am prepping to run the Pittsburgh Marathon ๐Ÿ’›๐Ÿ–คfor the first time. It's less than 24 hours away! Eeek! And let me tell you.... marathon training is no joke. It's time consuming. It's a shit ton of effort and planning. It's getting up early. It's changing weekend plans to fit in a 4 hour run. It's leaving your babies with their dad for huge chunks of time so you can get mileage in on your day off. Its making a super simple Sunday meal instead of an elaborate all day delicious creation. It's mom guilt personified!! Should I be taking time that I could be spending with my family, just to go running?!?! Should I be neglecting my house cleaning, grocery shopping, etc just to go running?!?! Should I be spending our hard earned money on race fees and running shoes when my kids outgrew their clothes (again)?!?!  And then this week.... the answer became clear, and my heart feels ...
So far so good with this current hybrid workout.  I have to say I like the intesity of this first week. The Core de Force day in the middle was a nice break midweek and I felt like my muscles needed the rest from weights for a day.  I'll keep you updated of any small adjustments I make to the workout but as of now its looking pretty solid.  Back to Grey Wolf Page
